Ingredients
- Juice of 1/2 lemon (about 1 1/2 Tbsp)
- 1 Tbsp Organic white wine vinegar
- 1/4 cup Extra virgin olive oil
- 5 oz Organic baby arugula
- Salt and pepper to taste
- Parmigiano Reggiano, shaved, for garnish
Directions
- Add lemon juice, vinegar, and olive oil to large bowl; whisk to combine.
- Add arugula to bowl; toss to combine.
- Season with salt and pepper; garnish with cheese shavings.
