Keto meal idea: Eggplant Parmesan

 
  1. Coat olive oil in pan. 

  2. Slice eggplant in 1/2-3/4 inch thickness

  3.  Sauté skinned eggplant; sea salt; cover with foil or lid on med low hear and turn when half cooked

  4. Return back to same pan layer with sauce and mozzarella in between layer, sauce and mozzarella on top cover until cheese is melted.
